1 bunch of rocolla
1 small onion
1 large tomato or handful cherry tomatoes halved
Juice of ½ a lemon
1 ½ tablespoons vinegar
2 mozzarella balls or ½ cup of shredded parmesan cheese
1 teaspoon sugar
3 tablespoons olive oil
Salt and pepper
1.Wash the rocolla leafs thoroughly and let them drain.
2.Cut the onion into halves, then into semi rings.
3.Cut the mozzarella into medium sized pieces and slice the tomatoes.
4.For the dressing mix the lemon with the sugar until dissolved, add the vinegar, salt and pepper and oil and mix well. Place the rocolla salad along with the tomatoes, onions and mozzarella. Pour the dressing on top and stir. Instead of the mozzarella you can sprinkle parmesan cheese on the salad.
